At Chakra we make a fusion version with the addition of watermelon, strawberries and Asian herbs. Historically this refreshing dish is a staple of Andalusian cuisine, and we're honored to have been provided the inspiration for the version we make here in the Western hemisphere. The origin of gazpacho can be traced back to the Andalusian region of Spain, where it is believed to have been created by farmworkers who needed a nourishing and cooling meal to combat the hot summer temperatures. The ingredients used in gazpacho reflect the agricultural abundance of the region, with ripe tomatoes, peppers, and cucumbers forming the base of the soup. The traditional preparation of gazpacho involves chopping the vegetables into small pieces and blending them together with olive oil, vinegar, and bread to create a smooth and creamy soup. Some variations of the recipe also include other ingredients such as avocado, watermelon, or even almonds to add different flavors and textures to the dish. One of the key techniques when making gazpacho is to allow the soup to chill in the refrigerator for several hours before serving.
